Cheese! Cheese! Cheese! ... So Cheesy ! How do they do it?

Hello everyone, I am Nikitha - A final year MBA student from Amrita School Of Business majoring in Operations and MarketingI am back with my blog and this time I am going to enlighten you with something mouth-watering! Yes, In the next few paragraphs I am going to explain about CHEESE and how is it made. 

Cheese is a fermented food derived from the milk of various mammals. Since humans began to domesticate milk-producing animals around 10,000 B.C. , they have known about the propensity of milk to separate into curds and whey. It is the curds that are used to make cheese, and practically every culture on Earth has developed its own methods, the only major exceptions being China and the ancient Americas.

The first cheeses were "fresh," that is, not fermented, similar to today's cottage cheese aka Paneer. By A.D. 100 cheese makers in various countries knew how to press, ripen, and cure fresh cheeses, thereby creating a product that could be stored for long periods. Each country or region developed different types of cheese that reflected local ingredients and conditions. The number of cheeses thus developed is staggering. France, famous for the quality and variety of its cheeses, is home to about 400 commercially available cheeses.

                                         


The manufacturing Process:



The picture above gives a complete image of how cheese reaches your plate, Cheese manufacturing is a straightforward yet nuanced process. Larger cheesemaking factories have automated production lines, which yield mostly uniform results. In contrast, small batch cheesemakers or even those making cheeses in the comfort of their own homes may find that cheese can vary batch by batch depending on the conditions under which it’s made.

The first step in the manufacturing process is preparing the milk. It takes 10 pounds of milk to make one pound of cheese. Small batch cheesemakers typically use unpasteurized milk, which includes the bacteria needed to produce lactic acid (the agent that makes the cheese curdle). Larger factories use pasteurized milk and then add the bacteria separately.

Once the milk is prepared, rennet is added to it to separate the curds and whey. The curds can be cut using knives and then drained and pressed into molds. After the curds have been prepared, they are ready for aging (though some soft cheeses, like cottage cheese, don’t need to be aged). The length of the aging process varies, depending on the variety of cheese. The cheese might be bathed in brine to stimulate the growth of mold or rind and then stored in a room at the proper temperature and humidity. Some cheeses might be aged for only a month, while others — like extra sharp cheddar — might be set aside to age for up to two years.

Quality Control :

In the factory, quality control is ensured by rigorous inspectors who test the cheese for a variety of factors like texture, body, smell, and taste — and then assign points based on these characteristics.

Cheese manufacturing presents some unique challenges, particularly because of the debate surrounding pasteurized and unpasteurized milk. To ensure the health of consumers, the FDA requires that many cheeses be made from pasteurized milk, but it does allow producers to use unpasteurized milk as long as those cheeses will be aged for more than 60 days. Cheese lovers argue that since pasteurization destroys the natural bacteria needed to manufacture cheese, making cheese with pasteurized milk results in an inferior product. Ultimately, this can make things complicated when it comes to the import and export of cheese, as different countries have different regulations surrounding pasteurization.

Despite the ongoing debate surrounding pasteurization, there seem to be no sign of the cheese supply chain slowing down. Americans can rest assured that they’re very much on track to reach (if not surpass!) the predicted 37 pounds per capita consumption rate by 2025.

TIMEKEEPING AT OLYMPICS

When I was entering my teenage years, I religiously followed sports – all kinds of sports, any kind of sports. I remember watching the 2008 Beijing Olympics, carefully scheduling the time slots of my favorite sports along with my school timing. If there is one event that took the world by storm that year, it must be the Swimming! The year Michael Phelps made history winning 8 gold medals. I could still vividly remember how his 7th race happened when Milorad Cavic almost grabbed that gold medal. But, suddenly, Phelps made a mini-stroke, propelling his upper body out of the water, and slamming the wall with his hands on the follow-through. Nobody could tell who finished first, because while one glided with big strokes, the other stroked shorter and faster. Even with the slow-motion replays, the reviewers could not decide.


So, how did they conclude who won the race?


How did they prove the protesting Serbian committee of Milorad wrong?


Luckily for the Olympics committee, they used high-tech timekeeping touchpad systems by Omega. Omega’s touchpad determined that Phelps won by one 1/100th of a second i.e., Phelps' time was 50.58 seconds while Milorad finished at 50.59 seconds!


Why did they choose Omega for this responsibility and not any other brand?

The Swiss Time Company has maintained its reputation for precision for over 150 years now and has introduced new technologies to enhance the timekeeping process.

The Mexico City Games of 1968 represented the first time that all Olympic sports, including the touchpad system for swimming, used electronic timekeeping. Omega and its subsidiary Swatch developed and introduced 20 new ways of timekeeping technology at the 1996 Summer Olympic Games in Atlanta, including the use of the Global Positioning System (GPS) to record the performances of 10,318 competitors, a record in itself. One hundred and ninety-six engineers and technicians came from Switzerland to support this hi-tech effort carrying 100 tons of equipment. Omega mobilized the aid of 450 engineers and technicians and 420 tonnes of equipment during the 2008 Beijing Olympic Games. While this support may seem unnecessary, preserving the reputation of Omega goods and services is a critical part of it.




In its line of personal timepieces, Omega applies the same degree of commitment. The Department of Quality Assurance puts every part of the timepiece through rigorous testing to ensure that it meets strict quality standards.


Four quality tests for Omega timepieces include:

  • To analyse the accuracy of the piece, the movement of the internal structures of the timepieces is examined through stringent testing. In order to ensure that each watch retains an acceptable degree of temperature resistance, vibration resistance, and shock resistance, the Technical Development Department also performs laboratory tests.
  • In the concept stage, the exterior casing of each piece must be approved even before it enters the production stage. Before it advances to the next level, a series of checks, such as its ability to withstand water, is tested.

  • Omega ensures that all facets of the timepieces can hold up against the toughest conditions in the world, meaning that each dial and hand is exposed to an ultraviolet examination to ensure that the timepiece stays intact following exposure to intense sunlight or humidity.
  • While it may not be the most technical feature of the Omega timepiece, the strap of each piece must still uphold certain consistency requirements. To prove its durability, each one is put through rigorous mechanical tests.

The commitment of Omega to quality is what makes the firm so respected. Omega strives to offer a premium product that has withstood several tests of time, whether its watches that are used to help a person be on time for a business dinner or to assess the outcomes of Olympic performances.

KFC India's Supply Chain

 




      
        Hello Readers, This is Muhammad Jassim from Amrita School of Business Coimbatore. Welcome to my sixth blog on Supply Chain, Hope you find it interesting and insightful. This week blog is all about KFC India's Supply Chain Management.


KFC India :

        Kentucky's Fried Chicken which is popularly known as KFC, launched in June 1995 in India and its first outlet was established in Bangalore. As Bangalore outlet functioned as the Head office of KFC India due to its remote venture agriculturists relationship in the nation. 
        KFC started growing outside of Bangalore from 2004, by changing their menu's from only meat to serve other foods like wraps and juices which as a part of its change in operational strategy. They have also introduced few vegan menus which includes, rice, suppers and few veg side dishes. From 2014 KFC India launched a campaign "So Veg, So Good" which is menu feature of a India particular special system to target vegans upfront.

KFC India Operational Strategy :

        1. Localization of Menus
        2. Building a proactive supply chain.
        3. In a country with a population of over billion, KFC India mastered with the operational strategy of using Pricing, Product Mix and Branding to target young population.


Demand Forecasting :

        KFC usually follows Projection chart technique which is helpful to analyse their demand and project it for each day of the week. In which average of previous six Monday is considered for a Monday. Generally, Demand forecasting is done for per lakh consumption. It is also calculated monthly based on previous months data.

KFC Suppliers :

        KFC India's main supplier is Venky's Chicken, which is the biggest poultry farms in India. KFC chooses Venky's as they are in motto to source only Chicken of 100% quality. Their other supplies includes,
                1. Buns
                2. Vegetables
                3. Milks
                4. Pepsi (Every alternative day)
                6. Fries (Once a week)
                7. Paper package 

        KFC India adopted open vendor system, before getting into any suppliers contract they undergo a Supplier quality check to ensure that the particular supplier worth their deal. Once the supplier is found worthy they offer them with a Tender based price quotation.

KFC's Logistics :

        The KFC got all its consignment delivered through specialized trucks which can control on board temperatures exclusively for maintaining the freshness of the item being delivered to the outlets. Mostly for this purpose they rely on Refrigerated trucks that transfers the products from place to place. The products that are received from these transports are been checked on its arrival and the defect one's are rejected then and there. KFC has all its authority to accept or reject the product been delivered to them and the rejected item is clearly mentioned in their invoice about the reason behind the rejection. The team sends a mail within twenty four hours of delivery and it will be replaced within forty eight hours from the time of rejection.

KFC's Storage :

        The Storage yard that KFC has maintains specific temperature as the cold storage consists of a specialized storage containers in it. KFC's special maintenance committee takes care of it and they are the one's who are responsible for the storage. They follow First In First Out mechanism in their storage  and they ensure freshness in the product delivered by following this. For example, the products are stored in the numbered rows based on the date of its arrival and they are taken from it in ascending order from it.

KFC's Inventory Management :

        They follow farm to fork strategy where products are delivered from farms which are grown fresh to their consumers table. This includes Receiving of products, storing it, preparing it, using it for production and finally serving it to the consumers. In the inventory management they follow KFC has a buffer of nine days. They manage back orders with neighboring KFC branches.

KFC's Quality Control Management :

        KFC India own its Maintenance Committee which is responsible for giving its employees training of about forty five days in total. This training ensure that the employees can undergo Quality control check on their own to ensure quality if the products being sold to the consumers.
